You could consider Curacao for your one week trip. It's a great island that it's best known for its scuba diving beaches and for its dolphin academy, and it has some great restaurants. Here I can mention The Wine Cellar which is a great French restaurant or Fishalicious Restaurant which offers you a variety of fish dishes and not only, and those are just two of them.
