Camera, change of clothing, clothes appropriate to the country and climate you are visiting, and any equipment you may need if you are doing trekking/hiking/surfing/etc, unless you can do better to hire it at your destination. For example, it´s cheaper and easier to hire a wet suit in South Africa than it is to carry one with you everywhere you visit.
As a visitor to South Africa, you also need to locally activate your mobile phone when you arrive. This website explains how to do it:
